- Boiled rajma (kidney beans)
- Onion
- Tomato
- Red and yellow bell peppers
- Garlic paste
- Chili powder
- Cumin powder
- Salt and pepper
- Sugar
- Oil for cooking
For the Pineapple Salsa:
- Pre-made salsa mixture
- Onion
- Tomato
- Green chilies
- Pineapple
- Fresh coriander
- Lime juice
For the Homemade Sour Cream:
- Fresh cream
- Lemon juice
- Salt
INSTRUCTIONS:
Step 1: Prepare the Bean Mixture by heating oil in a pan. Sauté onions, tomatoes, and bell peppers. Add garlic paste, chili powder, cumin powder, salt, pepper, and sugar. Stir well, then mix in the boiled rajma, mashing it until it has a smooth yet textured consistency.
Step 2: Make the Pineapple Salsa by enhancing a pre-made salsa mixture with chopped onions, tomatoes, green chilies, pineapple, coriander, and lime juice. Mix everything well for a fresh and zesty flavor.
Step 3: Prepare the Homemade Sour Cream by combining fresh cream with lemon juice and salt. Refrigerate for 10 minutes, then mix gently until it thickens and holds a firm texture.
Step 4: Assemble the Taco by filling a crispy taco shell with the bean mixture, topping it with pineapple salsa, and adding a dollop of the thick sour cream.
